Job Description

WHAT’S THE JOB?

The Third Cook fills a support position within the Culinary team. Working both day and night shifts the Third Cook prepares a wide variety of menu items to fulfill both the bagged lunch program, as well as items featured on both the breakfast and dinner menus to meet contract standards. The Third Cook will work with Culinary leads to present attractive and well-prepared products each day.

The position involves a remote work lifestyle in a camp setting with the following amenities:

  • All meals and accommodations are provided 
  • Travel is provided to and from the Montreal Airport
  • Private room with cable television 
  • Access to Wi-Fi 
  • Access to laundry facilities and detergents 
  • Access to a gym and common areas 

Working Conditions: 

  • Remote camp environment with extended periods away from home (3 weeks on/3 weeks off) 
  • Extreme weather conditions are common in Nunavut 
  • Extended periods of darkness/no sunshine this time of year 

Key responsibilities include:

  • Maintaining a safe working environment at all times
  • Following all safety controls including regular handwashing, proper use of PPE and enhanced cleaning/sanitation requirements
  • Providing excellent and consistent service for all guests using the KDR facilities
  • Maintaining a clean and organized workstation throughout the shift
  • Preparing all hot and cold items required for both the daily bagged lunch program and the breakfast and dinner menu services. Items include, but are not limited to:
    • Cut fruits, vegetables and other items served at the cold tables for both bagged lunches and menu service
    • Simple salads using various vegetables and fruits
    • Compound/mixed salads such as potato, pasta salads or other preparations
    • Other required menu items as directed
  • Ensuring that food safety requirements are being followed
  • Completing all HACCP and Production logs as required
  • Labelling and dating of all products prepared for service as required
  • Removing all used pots, pans, utensils, etc., to ware washing area
  • Performing end-of-shift cleaning, sweeping, and mopping of workstation
  • Completing all weekly and monthly cleaning tasks as scheduled
  • Removing garbage from workstation as required
  • Receiving and storing all supplies (food, beverage, chemical and paper/disposable)
  • Assisting with any other tasks as assigned by supervisor

Qualifications

WHO ARE WE LOOKING FOR?

  • Large-scale cooking in camp settings, banquet halls and/or hotels is a strong asset
  • Current Food Safe certification is required 
  • Ability to commit to a 3 week on/3 week off rotation 
  • A team-player who is committed to providing client satisfaction 
  • Must have valid government issued photo ID for travel to site 
  • Ability to handle the following physical demands:
    • Lift, carry, push or pull up to 50lbs 
    • Climb ladders or stairs 
    • Stand, walk, squat, kneel or sit according to task for extended periods of time 
    • Perform repetitive hand work requiring full use of both hands
    • Perform work with arms at full length 
    • Work with arms above shoulder height

Work schedule and remuneration: 

3rd Cooks work on a rotational schedule of 3 weeks on/3 weeks off. Site location is in a remote camp setting in Nunavut. You may be required to work nights, weekdays, weekends, and general holidays. Wages are paid on an hourly basis with a starting rate of $19.50/hour
